Dinner tonight: Huevos Rancheros

 

This is one of my favorite go to meals. The simple 4 basic ingredients in this recipe are staples in my house and so when we don't have anything to eat, there's always fixins for Huevos. While I see this recipe categorized as breakfast, it's savory enough that it makes for a filling dinner, and personally I don't think there's anything better tasting than when the refried beans and the egg yolk mix :) But if soft yolks aren't your thing, feel free to cook the eggs however you'd like!

  • 1 can (16 Oz. Can) Refried Beans
  • 2 whole Corn Tortillas, Per Serving
  • 1-2 whole Egg, Per Serving
  • Your Favorite Salsa
Optional:
  • Shredded Jack Cheese
  • Chorizo Sausage
  • Fresh Cilantro, Chopped

Heat the refried beans, I find it easiest to stick them in a glass bowl in the microwave.
Toss corn tortilla on a cookie sheet under the broiler to lightly toast. (make sure to keep an eye on them so they don't burn!)
Cook the eggs to your liking.
Spread refried beans onto toasted tortillas, add eggs on top of beans as well as cheese or chorizo if using and top with your favorite salsa. Sprinkle Cilantro on top if using.

German-Style Beef Roast

Crockpot meals require a little bit of planning the day before or the morning of, but can be nice way to break out of the rut without spending a lot of time in front of the stove on a week night. I haven't tried this recipe yet, but it sure sounds good!

Ingredients
2.5-3lb beef pot roast (I'm acutally using venison since I already have it in the freezer)
1 tablespoon of cooking oil
2 cups sliced carrots
2 cups chopped onions
1 cup sliced celery
3/4 cup chopped kosher pickles
1/2 cup beef broth
1/3 cup German style mustard
2 bay leaves
salt and pepper
Egg noodles
2 tablespoons butter
2 tablespoons flour

Sunday afternoon prep: heat oil in a large skillet. Pat roast dry with paper towels and brown on all sides.
Chop all veggies and add into the crock. Place browned roast on top of veggies. In a small bowl combine beef broth, mustard, pickles, salt and pepper and bay leaves. Pour over veggies and meat. Place lid on crock and stick in the fridge until the next morning.

Monday morning: place crock in the slow cooker and set on low for 8-10 hours or high for 4-5 hours.

Monday evening: bring a pot of water to boil and cook the egg noodles. Make a quick gravy, melt butter in saucepan and add flour, cook until the color of peanut butter. Add liquid from roast and cook until thickened about 2-3 minutes. Serve roast, veggies and gravy over egg noodles and enjoy!

**Update** This recipe turned out really well, Husband and I will be making this one again!

Dinners for the week of October 18

Like many weeks, this week is going to be a very busy one. Husband and I are both going to be working a number of late nights. With this taken into consideration, this week's meals are all very easy to pull together and quick to make.

Monday: Crockpot German Beef Roast with Egg noodles

Wednesday: Chicken and summer squash green curry with rice
Thursday: Leftovers
Friday: Lemon Walleye with steamed broccoli
Saturday: Spaghetti

I struggle with dinner ideas all the time. Who doesn't?

Most weeks I'm pretty good at pulling together a meal plan and heading to the store with the grocery list. Most weeks. This week it all fell completely apart. I was not home on Sunday morning, my normal time to sit down, pull together a list of meals, rummage through the refrigerator, freezer and pantry to see what I need to buy and then head off to the store. I find it easy to pull together the grocery list, it's pulling together the meal ideas that is the biggest struggle for me. 

Hopefully this website along with the facebook page will not only allow me to post dinner ideas and recipes, but will allow others to share their meal plans and inspire us all.
